HUGE Menu Changes Arrive at Hollywood Brown Derby in Disney’s Hollywood Studios

Is there a restaurant more iconic in Disney World than Hollywood Brown Derby at Disney’s Hollywood Studios?

The restaurant, which is a replica of the famous Brown Derby in Hollywood, just oozes golden age Hollywood. This location serves up some delicious signature foods that have become famous, like the Cobb Salad and Grapefruit Cake. Well, we’ve got some big news about this restaurant: the menu has changed.

First, we’re going to let you know not to worry about that Cobb Salad and Grapefruit Cake — those iconic dishes will remain on the menu (phew!). However, the rest of the restaurant’s menu got a seasonal makeover. Note that some of these changes happened a little earlier this spring, so we decided to compile ALL the recent updates right here!

Let’s see what’s on the (NEW) menu!

It all starts with the appetizers: the Roasted Squash and Apple Soup ($15) is now gone and has been replaced with the Corn Bisque, which is made with Grilled Local Corn, Guajillo Oil, and Corn Fritter.

Some other favorites are also available. The Crab Louie ($17) has Crispy Olive Bread, Citrus blend, Fried Capers, and Louie Sauce. The Shrimp Cocktail ($17) is topped with shaved fennel cucumbers and a traditional cocktail sauce. You can also still order the Charcuterie Board, as well as the Heirloom Tomato and Burrata Salad.

The description for Escargot has changed. It was previously described as having Roasted Garlic Béchamel and Crispy Prosciutto. It is now described as having Roasted Garlic Béchamel, Crispy Prosciutto, and Puff Pastry. Roasted Bone Marrow ($17) with Braised Beef, Pickled Mustard Seeds, and Fig Bread Crostini is also available.

Escargot

Some entrees have been taken off the menu, including the Sustainable Salmon Coulibiac, Free-Range Chicken Coq au Vin Tomato Risotto, Braised Short Rib, and Duck à l’Orange. But NEW entrees are available.

  • Sustainable Fish ($45) with  White Bean Ragoût, Derby Summer Vegetables, and Roasted Tomato Emulsion
  • Free-Range Chicken and Dumplings ($35) with Lemon-Ricotta Gnudi, Shishito Cream, and Gooseberry Jus
  • Shepherd’s Pie ($32) with Roasted Garlic Mashed Potatoes, Mushrooms, Peas, Corn, and Carrot Romesco
  • Lamb Shank ($45) with Summer Vegetables, Harissa Vinaigrette, and Nasturtium Chermoula
  • Seafood Cioppino ($48) with Shrimp, Sea Scallops, Seasonal Fish, Mussels, Toasted Baguette, and Aromatic Tomato Broth

Two other entrees had description changes. Filet Mignon was previously served with Root Vegetable Hash, Charred Sweet Peppers, and Green Peppercorn sauce. It is now served with Glazed Carrots, Potato Pavé, Horseradish Cream, and Peppercorn Sauce.

Grilled Pork was previously served with Roasted Sweet Potatoes, Brussels Sprouts, and Red Eye Gravy. It is now served with Lavender-Sage Polenta, Local Corn Salsa, and Huckleberry Barbecue.

Don’t worry — the Cobb salad is still there.

If you want to add enhancements to your meal, those, too, have changed. Brussels Sprouts have been replaced with Mixed Mushroom Sauté.

In addition to the Grapefruit Cake, there’s a new dessert on the menu: Brûléed Champagne Sabayon ($13) — it’s served with Minted Strawberries and Lemon-Pine Nut Biscotti.
