See the Big Menu Changes at a Coronado Springs Hotel Restaurant in Disney World!

Walt Disney once said, “Disneyland will never be completed. It will continue to grow as long as there is imagination left in the world.” That same quote, though, can also apply to Disney World, where things are always changing.

For example, right now, a classic Disney ride is being reimagined into a new attraction. New restaurants are coming to Disney Springs and Disney’s BoardWalk. The latest change, though, has happened at a Disney World restaurant.

Over at Disney’s Coronado Springs Resort, you’ll find Maya Grill, a restaurant we often refer to as underrated. Well, Maya Grill just gave its menu a big update, meaning that a lot of menu items are now gone, but a lot of new menu items have been added.

Let’s take a look at what changed under Starters, aka Appetizers.

Starters

The Fiesta Nachos, Empanada de Barbacoa, and Shrimp Mojo have all been removed from the menu. Chips and Salsa is now Chips and Salsa Trio, which comes with crispy tortilla chips paired with three house-made salsas: Salsa Roja, Smokey Chipotle, and Avocado Verde for $12. There is also an option to add Queso or Guacamole for $4.

The Guacamole is now called House Guacamole for $14 and is described as “Our delicious blend of hand-crushed avocado, charred jalapeno, and cucumber salsa, served with crispy tortilla chips.” The Southwestern Tortilla Soup is now Chicken Tortilla Soup, but the description and price are the same.

Some new menu items are also available:

  •  Queso Fundido for $12, is made with flour tortillas served alongside melted Chihuahua and Oaxaca cheese, pico de gallo, and cilantro. You can add chorizo for $3.
  • Chicken Tinga Flautas for $13 is made with shredded chicken tinga in fried corn tortillas, and served with chipotle mayo, Mexican crema, and pico de gallo. It’s topped with cotija cheese.
  • Mexican Shrimp Cocktail for $16 is made with shrimp, arugula, avocado, radish, and cilantro combined with Mexican cocktail sauce.
  • Chicken Tortilla Soup for $12 is made with chipotle chicken, guajillo chicken broth, fresh avocado, and tortilla strips topped with a dollop of sour cream.

Under Salads, the Traditional Taco Salad is now a Deconstructed Taco Salad for $24  made with Mixed greens, cilantro dressing, red onions, cherry tomatoes, avocado, cotija cheese, esquites and ground beef served with crispy tortilla chips. 

The Fiesta Salad description changed from “Mixed Green Salad, Red Bell Peppers, Scallions, Queso Fresco, Crispy Tortilla Strips, Pumpkin Seeds, Cilantro Vinaigrette, served in a Toasted Cheese Bowl to “Mix greens, esquites, pico de gallo, cotija cheese, avocado, diced pineapples, crispy corn tortillas lemon oregano dressing.”

The Ensalada Caesar description changed from “Romaine Hearts, Crispy Croutons, Parmesan Cheese, Caesar Dressing, Lime Juice” to “Chopped romaine hearts, house croutons, parmesan cheese, classic caesar dressing.”

The Entrees part of the menu also saw a lot of changes. The Baja Fish Tacos description changed from “Tempura Battered Cod, Shredded Cabbage, Chipotle Lime Aioli, Pineapple Relish, Lime, Tajin, Flour Tortillas, served with Esquites” to “Beer-battered fish served with tangy pickled cabbage, charred pineapple salsa, and chipotle aioli. Served with a side of Yuca fries and chimichurri” and the price increased from $25 to $28.

Sous Vide Short Rib, Beef Quesadilla, Plant-based Chicken Enchiladas, Cochinita Pibil, Chicken Enchiladas, Adobo Half Chicken, Queso Fundido Burger, and Monterey Chicken Sandwich have all been removed from the menu.

However, the following new menu items are now available:

  • Chicken Tinga Enchiladas for $30 are rolled in home-made corn tortillas with salsa verde, Oaxaca, and Chihuahua cheese, topped with sour cream, Cotija cheese, and crispy onions served with sweet plantains.
  • Birra Lamb Enchiladas for $28 are rolled in home-made corn tortillas, salsa verde, Oaxaca and Chihuahua cheese, topped with sour cream, Cotija cheese, and crispy onions served with sweet plantains.
  • Chille Relleno for $30 is made with plant-based chorizo, rice, and black beans with roasted tomato salsa roja.
  • Chicken Mole for $32 is made with roasted airline chicken, Oaxaca mole, roasted tricolor cauliflowe,r and sauteed broccolini.
  • Ossobuco Al Pastor for $38 is made with sous vide pork osso buco al pastor, served with chipotle sweet potatoes, and sauteed broccolini, topped with pineapple chutney.
  • Fresh Catch for Market Price is topped with cilantro crema, roasted marble potatoes, blistered heirloom baby tomatoes, and sauteed broccolini.

Sides have also changed: Roasted Poblano Potatoes Gratin, Spicy Chili Cheese Fries, Esquites, Plantain Rice, and Seasoned French Fries have all been removed from the menu. Chipotle Brussels Sprouts is now just Brussels Sprouts.

The following was added, though: Cilantro Rice, Sauteed Broccolini, Marble Potatoes, Sweet Chipotle Mash, Refried Beans, and Tri-Color Cauliflower

Roasted Poblano Potatoes Gratin

Under Desserts, the Mango or Strawberry Sorbet, Fried Baby Churros, and Impossible Cake have all been taken off the menu. However, the following new desserts are now available:

  • Fried Churro Ice Cream for $12 is vanilla ice cream coated in churro crunch, resting on a bed of Oreo cookie crumbles, drizzled with chocolate syrup.
  • Pastel de Tres-Leche for $14 is made with homemade sweet sponge cake soaked with three different milks and topped with  meringue.
  • Mexican Mocha Lava Cake for $14 is a gooey Abuelita chocolate cake with dulce de leche ice cream, sprinkled with powdered sugar and cinnamon.
  • Café de Olla for $16 is Mexican coffee blended with Abuelita chocolate, complemented by subtle hints of orange and cinnamon. You can add Magdalla Orange Liquor for $9 or add Disaronno Amaretto for $12.
Fried Baby Churros

Even some alcoholic beverages have changed. The following wines have been removed: Vina Maipo Chardonnay, Benvolio Pinot Grigio, Vina Maipo Merlot, Raymond R Cabernet Sauvignon, and Zolo Malbec.

These wines, though, have been added:

  • Eos Chardonnay for $10 per glass and $40 per bottle
  • Ecco Domani Pinot Grigio for $10 per glass and $40 per bottle
  • Eos Merlot for $10 per glass and $45 per bottle
  • Nieto Malbec for $15 per glass and $53 per bottle
  • Mexican Sangria for $14

The Tequila selection has also changed: the descriptions for the various tequila offerings are now different. Here’s what that looks like now:

  • Tequila Blanco description changed from “Casa Noble Blanco • 11 | Patron Blanco • 15 | Ambhar Blanco • 12 | Volcan Blanco • 12 | Casamigos Blanco • 15 | Casa Dragones Blanco • 17” to “Casa Noble Blanco • $15 | Patron Blanco • $16.50 | Casamigos Blanco • $16 | Casa Dragones Blanco • $18”
  • Tequila Resposado description changed from “Milagro Reposado • 13 | Maestro Dobel Reposado • 11 | Casa Noble Reposado • 14 | Clase Azul Reposado • 27” to “Milagro Reposado • $13 | Maestro Dobel Reposado • $15 | Herradura Reposado • $18 | Clase Azul Reposado • $32”
  • Tequila Añejo description changed from “Ambhar Añejo 15 | Casa Noble Añejo 16 | Avion Añejo 17” to “Ambhar Añejo $17 | Casa Noble Añejo $18 | Avion Añejo $30”
