Who’s ready to make some more Disney recipes?

We love bringing Disney magic into our homes with home decor, holiday decorations, or delicious Disney recipes. With recipes especially, you can share the magic with your family and friends as well. If you’ve been seeing all our posts about EPCOT’s Food & Wine Festival and feel like you’re missing out, now you can make one of the festival’s recipes at home!
This recipe is a little involved, but it’ll be worth it to have a tasty Rocky Road Cake, inspired by the Flavors from Fire Global Marketplace at the EPCOT Food and Wine Festival.

Ingredients
You’ll need multiple different ingredients for each of the four parts of this recipe.
Spicy Sugared Almonds
- 1/3 cup plus 1 teaspoon sugar, divided
- 1/8 teaspoon cinnamon
- 1/8 teaspoon ground cayenne
- 3 tablespoons water
- 3/4 cup unsalted almonds
Chocolate Ganache
- 6 ounces dark chocolate, chopped
- 2/3 cup heavy cream
Chocolate-Buttermilk Cake
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1/2 cup hot water
Toppings
- 1 cup mini marshmallows
- Sea salt
- Reserved chocolate ganache
Instructions
Take these steps one at a time, and you’ll have your finished product in no time.
Spicy Sugared Almonds
- To begin, line a baking sheet with parchment paper and set aside.
- Combine 1 teaspoon of sugar with the cinnamon and cayenne in a small bowl, then set aside.
- Stir the remaining 1/3 cup of sugar and water in a medium saucepan over medium-high heat until it boils. Carefully add almonds and stir frequently for 8-10 minutes until the water evaporates. Continue stirring for 2-3 minutes until the sugar begins to caramelize. Sprinkle the sugar, cinnamon, and cayenne mixture you set aside over the almonds and stir to mix together.
- Pour the almonds onto your baking sheet and separate with a spatula.
- Let the almonds cool completely, then coarsely chop them. You can store them in an airtight container for up to 3 days.
Chocolate Ganache
- Spray eight 6-ounce ramekins with non-stick cooking spray and set aside.
- Place chopped chocolate in a medium glass bowl.
- Bring heavy cream to a simmer in a small saucepan over medium heat. Pour over the chocolate and let it sit for 5 minutes, then stir until smooth.
- Place 1 1/2 tablespoons of ganache in each ramekin and refrigerate for 20 minutes. Keep the remaining ganache at room temperature until ready to serve.
Chocolate-Buttermilk Cake
- Preheat your oven to 350°F.
- In a large mixing bowl, whisk together your flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add your egg, oil, and buttermilk. Whisk to combine. Carefully add your boiling water and whisk until the batter is smooth.
- Remove ramekins filled with ganache from the refrigerator and fill each with 1/3 cup of cake batter. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Then, allow to cool for 5-10 minutes before serving.
The Final Product
Carefully remove the cakes from the ramekins and top each rocky road cake with 2 tablespoons of mini marshmallows and 1 tablespoon of spicy-sweet almonds. Warm the remaining chocolate ganache in the microwave for 30 seconds on 50% power and drizzle it over each cake, then sprinkle with sea salt.
