We may not talk about Bruno, but this new Encanto-inspired recipe is truly something to sing about!

As a part of National Hispanic Heritage Month, Disney has released a tasty new Columbian-centric Arepas Con Queso recipe inspired by Encanto for you to try out on your own!
The cheesy Latin dish recipe makes about seven arepas, so this will be perfect for an Encanto movie night with the family!
Ingredients
9 oz. White Cornmeal
2 tablespoons of butter
3 pinches of salt
olive oil
4 oz. shredded mozzarella cheese
10 oz. warm water
Optional: thin slices of queso fresco
Instructions
First, place your cornmeal in a medium mixing bowl and add warm water, butter, and salt. Then mix by hand until it is nice and sticky.
Helpful tip! If the dough gets too sticky, add more cornmeal. If it gets too dry, just add a little bit more water.
Now you’ll want to add some cheese to the mixture then scoop out some small balls of dough that are roughly smaller than the size of your palm.
Next, you’ll want to take each ball and flatten it to around 1/2 an inch of thickness and place them all on parchment paper.
Now take your olive oil and pour it into a medium-sized saucepan and keep it around medium heat. Once the oil is nice and hot, add your arepas and have them cook until golden on both sides! (this should only take around seven minutes on each side!)
Once they are done cooking, place the arepas on your plate, pop in Encanto, and sing along with the whole family as you enjoy this new Columbian-style Disney dish! (just remember, we still don’t talk about Bruno!)
For our cheese lovers out there, add the queso fresco for an extra little kick to dinner!

FYI, we make arepas all the time and the cornmeal should be masarepa (pre-cooked cornmeal).
