Uh, Disney? Is This Potential New Permit for Gideon’s Bakehouse Something We Should Decode?

Disney Springs has been in a constant state of evolution lately, with new shops, refreshed dining experiences, and quiet construction activity signaling even more to come. Amid all the shifting pieces, a recent permit filing has sparked fresh curiosity among fans who keep a close eye on what might be next for the vibrant entertainment district. While the details are still tucked away in the paperwork, the early signs suggest something intriguing may be brewing behind the scenes.

A newly filed construction permit is stirring excitement among Disney fans, especially those who follow the ever-popular Gideon’s Bakehouse. A Notice of Commencement submitted on December 1st, points to a new tenant build-out in a familiar spot. The place in question might ring a familiar bell as it previously housed The Art of Shaving. And based on the entities involved, many are speculating that Gideon’s parent company may be preparing for a brand-new project at Disney Springs.

So, here’s what we know so far about this project. The permit lists improvements to be made at 1600 E. Buena Vista Drive, Suite C-22, right in the heart of Disney Springs. While the document does not explicitly name the incoming tenant, it contains a few intriguing clues. Most notably, the permit is signed by Patrick McKinney, the Director of Operations for The First Raven, LLC — the company widely recognized as the parent organization behind Gideon’s Bakehouse.

This connection has intensified speculation that Gideon’s could be developing a second location, expanding its operations, or introducing a completely new concept. The existing Gideon’s Bakehouse at Disney Springs is known for its famously long lines, limited-edition flavors, and ornate Victorian-Gothic aesthetic. Any hint of expansion naturally generates buzz among both local fans and tourists who make the shop a must-visit stop during their day at Disney Springs.

And while we’re not getting any favors from the basics listed on the permit, it does however identify the project simply as a “New Tenant Build-Out of Lease Space in Disney Springs.” While that wording is fairly common for incoming businesses, the involvement of The First Raven, LLC suggests something far more specific than a generic retail or dining tenant. The contractor listed on the permit, CaliC Group, Inc., is an Orlando-based builder who is also attached to the project.

The space in question is the former site of The Art of Shaving. It’s remained vacant since the grooming retailer closed its Disney Springs location in early 2023. It’s prime real estate among the Disney Springs stores though — positioned in a high-traffic area with strong visibility, and could be well-suited for a specialty food brand or boutique experience. Its size and layout could also offer opportunities for creative interior theming that aligns with the distinctive atmosphere Gideon’s Bakehouse has cultivated (plus its proximity to the already existing location doesn’t hurt either)!

While no public announcement has been made by Gideon’s or Disney, permit filings like this often precede official confirmations by weeks or even months. And if you’ve been following us for a while, you may remember that early permit activity similarly hinted at the arrival of the original Gideon’s Bakehouse location before Disney formally unveiled the project.

For now, we can only speculate about what The First Raven, LLC has planned like a larger production kitchen, a second storefront, a themed lounge concept, or perhaps an entirely new brand from the creative team behind one of Orlando’s most beloved bakeries. If history is any indication though, something delicious — or at the very least, delightfully atmospheric — may be on the way.
