Rosa Mexicano’s Cinco de Mayo is promoting a full-on fiesta on Tuesday, May 5th, with $5 Jello shots, $5 select margaritas after 9PM, and a music takeover from 6PM to 7PM featuring hits from Mexican artists.

And honestly? This is exactly the kind of Disney-adjacent holiday situation people love. It’s festive, it’s adult, it’s outside the park chaos, and it comes with a built-in excuse to wander over to a stylish hotel restaurant instead of elbowing your way through another overly crowded bar line somewhere else. Rosa Mexicano already has the kind of lively, polished atmosphere that feels a little more “let’s make a night of it” and a little less “we panic-booked whatever was available.”
Cinco Starts Here
Look, sometimes a holiday promo is just a sad little themed cocktail with a punny name and a prayer. Not here. Rosa Mexicano is coming in with actual drink specials and actual entertainment, which is how you get Disney Adults to leave their rooms with purpose.

The reason some of us would absolutely “accidentally” end up at the Dolphin on May 5th. This is not your standard guacamole that looks like a sad roadside stand avocado and a whisper of spice. This is signature tableside guacamole. This is a condiment that doubles as a meal and doesn’t just avocadoes as a binder, but as a main character. As the avocado intended.

It also helps that Rosa Mexicano doesn’t feel sleepy or overly buttoned-up. The place has a lively bar, festive dining rooms, and a menu built for lingering a little. That matters on a holiday like Cinco de Mayo. You don’t want a dinner that feels like a business lunch wearing a sombrero. You want somewhere that understands the assignment. Rosa Mexicano very much seems to understand the assignment.
Before You Fiesta
A couple of planning notes, because somebody has to be the responsible one for at least five seconds. Rosa Mexicano is located in the Walt Disney World Dolphin Hotel, and dinner hours are 5PM to 11PM. The adjacent lounge is open from 5PM to 11PM. This location does not participate in the Disney Dining Plan and does not accept MagicBands or Disney Gift Cards as payment. So no, you cannot simply wave your wrist at the guac and hope destiny handles it.

But once you know that? This is a pretty easy sell. You’ve got a festive holiday setup, real drink specials, music, one of the better Mexican restaurant reputations in the Disney resort orbit, and tableside guac that deserves its own standing ovation. Frankly, I’ve seen people get more excited for less. Much less.

If you’ve been looking for an excuse to ditch the usual Disney routine and do something a little more fun on May 5th, Rosa Mexicano is making a very compelling case. The Cinco de Mayo specials give the night its spark, the margaritas bring the chaos, and the guacamole is out here doing the Lord’s work one tableside mash at a time.
Add in the stylish setting at the Dolphin and the easy EPCOT-area location, and it’s not hard to see why Disney Adults are going to be making a beeline for this hotel.
