Disney is currently celebrating Hispanic & Latin American Heritage Month, and it’s been bringing us so many incredible snacks in the Disney parks.

But that’s not all — you can celebrate at home with this new Disney recipe that could be found at Cinderella’s Royal Table earlier this month. Let’s learn how to make Creamy Plantain Soup!
This new Puerto Rican recipe was brought to the park by Assistant Sous Chef Suni Quinones Rivera and reminds her of a similar dish her grandmother would make for her as a child when she was sick. While it was only available in Disney World through October 15th, here’s how you can make it at home!

Ingredients
- 2 tablespoons canola oil
- 1 cup diced onion
- 1/2 cup diced carrot
- 2 tablespoons minced garlic
- 5 green plantains, peeled and cut into 2-inch pieces
- 3 tablespoons vegetable soup base
- 8 cups water
- 1 tablespoon ground cumin
- 1 bunch cilantro, chopped
- 1 teaspoon salt, plus more, to taste
- 1/2 teaspoon freshly ground black pepper, plus more, to taste
- 6 fried plantain strips
- 1/4 cup micro cilantro

Instructions
- Heat oil in a large stockpot over medium heat for 5 minutes, until hot. Add onions and carrots and sauté for five minutes, until soft. Add garlic and sauté for one minute, until fragrant.
- Add plantains, vegetable soup base, and water. Bring it to a boil. Reduce heat to simmer and cook for 20 minutes, until plantains are soft. Remove from heat.
- Add cumin, cilantro, salt, and pepper. Pureé with an immersion blender until smooth. Season with additional salt and pepper to taste.
- Ladle soup into bowls and garnish each bowl with one plantain strip and a few sprigs of micro cilantro.
