Opened February 4, 2017 on the site of the former Fulton's Crab House.
The new restaurant, a major renovation of the former Fulton's Crab House, focuses on seafood, serving a variety of fish as well as crab legs, local stone crabs and blue crab. The new venue's decor is completely different from Fulton's "turn-of-the-century riverboat" theme, and is more like a luxurious, modern yacht. The restaurant is open seven days a week, with separate lunch and dinner menus. There will also be a new late-night menu introduced on the boat's third deck. Executive Chef Mark Boor, who was with Fulton's for five years, says that Paddlefish features several signature dishes, including one introduced already at the Epcot Food and Wine Festival: scallops pan-seared with brown butter, served with roasted Brussels sprouts, cauliflower puree and bacon.
