Now, onto some appetizers!

Cheddar Cheese Soup from Le Cellier

One of our favorite places to dine is in EPCOT’s Canada Pavilion in the World Showcase. Le Cellier really transports you to a cozy wine cellar, and we always order their Cheddar Cheese Soup. Here is how you can make these warm, cheesy goodness at home!

Le Cellier

  • 1/4 lb. smoked bacon finely chopped

  • 1/2 cup Moosehead Canadian Ale, room temperature
  • salt and pepper to taste
  • 1 TB thinly sliced chives

Method:

4. Remove from heat and whisk in cheese, Tabasco, Worcestershire, and ale—season with salt and pepper to taste.

5. Serve with your favorite bread and top with chopped chives.

Naan Bread from Sanaa

We are always raving about the bread service at Sanaa at Animal Kingdom Lodge. While this recipe may not come with all the different sauces to dip with, this recipe helps fill the void until we are able to dine at Sanaa and order it in person. This recipe makes about five eight-inch breads*.

Sanaa

Ingredients:

  • 3 2/3 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon coarse salt
  • 1/2 tablespoon baking soda
  • 1/2 cup milk
  • 2/3 cup warm water
  • 1 tablespoon canola oil
  • 4 tablespoons butter, melted

Method:

1. Combine flour, sugar, salt, and baking soda in the bowl of an electric mixer fitted with the paddle attachment. Stir to combine.

2. Combine milk, water, and oil in a medium bowl. Whisk to combine.

3. With the mixer running, pour wet ingredients into dry ingredients. As soon as the mixture comes together, switch the attachment to a dough hook and mix until the dough is smooth and no longer sticky. Do not over-mix.

4. Cover the bowl with plastic wrap and set aside at room temperature for one hour.

5. Place a pizza stone on the top rack of the oven, positioned approximately six inches below the broiler. Preheat oven to 500 degrees F for at least 30 minutes.

6. Divide dough evenly into five pieces. On a lightly floured surface, roll each piece into an 8-inch circle.

7. Turn over to broil. Carefully slide one circle of dough onto the preheated pizza stone and broil until the bread is bubbled and golden brown, about two to three minutes. Watch carefully, as the bread can burn very quickly. Repeat with remaining dough circles. Brush the warm bread with melted butter and serve immediately.
