Disney Recipes: Make Your Own Strawberry Shortcake Ice Cream Sandwiches from Animal Kingdom!

Guess who’s not that good at baking but loves recreating Disney treats and is back in the kitchen?

I made Lunch Box Tarts and Dole Whip, and now — time for a new challenge.

I decided to recreated one of my favorte Disney park snacks: a cookie ice cream sandwich.

And not just any cookie ice cream sandwich, the STRAWBERRY SHORTCAKE COOKIE ICE CREAM SANDWICH!

Strawberry Shortcake Ice Cream Sandwich

This delicious treat from Dino-Bites in Animal Kingdom has come in many flavors, including a classic chocolate chip cookie with vanilla ice cream and a pepperming with candy canes, but this version was my absolute fave!

Now let’s get baking!

DIY STRAWBERRY SHORTCAKE ICE CREAM SANDWICH

First up — the ingredients!

Ingredients

You’ll need strawberry ice cream, strawberry cake mix, vanilla cake mix, and sugar cookie mix — plus eggs, butter, oil, and flour per the mix boxes.

You can, of course, make any of these elements from scratch, but I’m not quite that patient or talented (yet).

Cake Batters

It’s wise to prep and bake the cakes first, as they take longer. You can bake them in any size you like — but I found cupcakes are the easiest. Plus you’ll only need a few, and then you’ve got leftover cups. WIN.

While the cupcakes are baking, get to work on the cookies! As a pro tip — instead of rolling the dough out, hand roll little balls and then flatthen them with the bottom of a glass on the cookie sheet. It’s much faster!

I also added sprinkles before I popped them in the oven, because WHY NOT!?

Cookies

I let the cookies bake to a little browner than I normally prefer — don’t forget they have to withstand ice cream!

When the cupcakes are done and cooled, crumble some up to make cake crumbles.

Once the cookies are done and cool, it’s time to assemble!

Simply add the strawberry ice cream to a cookie, making sure there’s enough that it’s close to the edges. Top with another cookie, and then roll through the crumbs.

Ta-da!

Simple as that!

And the best thing about this treat is how customizable it is! You can choose your favorite flavor of ice cream, cake, and cookies. You can roll it in sprinkles or oreo crumbs or candy instead of cake crumbles. Get crazy! There are no rules right now.

This super simple but very delicious treat is a great one to do with the kids as well — they’ll love mixing and matching different flavors and toppings.
