Welp, I Know Where I’ll Be Eating This Weekend!

This Sunday, April 26th, is International Flamingo Day. To celebrate, you should head to the Hyatt Regency Grand Cypress Resort!

Four Flamingos

Four Flamingos, A Richard Blais Florida Kitchen, is a Florida-inspired surf and turf restaurant inside the Hyatt Regency Grand Cypress Resort, and they’re going all in for International Flamingo Day!

This Sunday, April 26, Four Flamingos will celebrate International Flamingo Day by offering a free dessert to guests who wear flamingo-themed attire. This can be anything from a pink outfit to a full-on flamingo costume!

With the purchase of an entrée, you can get a free dessert of your choice, including:

  • Baked Florida – Frozen key lime pie, raspberry gelée, and flambéed meringue
  • Coconut Panna Cotta – Mango basil foam, pink pineapple confit, and coconut ginger streusel
  • Tiramisù Tres Leches – Mascarpone mousse, pistachio ganache, and cacao tuile
  • Dulce de leche Crème Brulee – Dark chocolate biscotti, exotic coulis, espresso soil
Baked Florida

We’ve tried their Baked Florida before, since it’s one of their signature desserts. It’s a frozen key lime pie with raspberry gelée and flambéed meringue, and it’s flambéed tableside! We loved this take on key lime pie — the rum flavor balanced out with the tartness of the key lime and the creaminess of the meringue. The key lime was sweet and tart, and the raspberry complemented that well.

Baked Florida

If you’re not sure what entree to get, we love the Bluehouse Salmon, which is blackened local salmon with grilled broccolini and yuzu remoulade. This was such a well-executed, simple dish with fresh flavors. The salmon was cooked perfectly, and it was moist and tender, but the blackening seasoning took it to the next level. We loved the yuzu remoulade — it was creamy, citrusy, and paired well with the salmon and broccolini.

Bluehouse Salmon

We also love the Filet Mignon, which is served with Florida Gouda mashed potatoes, sangria au poivre, and fried mushrooms. Honestly, this was one of the best steaks we ever had. It was cooked medium rare, and it was perfectly done with a warm red center. The char on the steak provided a delicious flavor, and the sangria au poivre sauce was SO unique. It was like a red wine sauce, but with the addition of citrus and pepper.
