Disney Recipe: How to Make Vegan Pavlova with Red Fruits at Home

Last week kicked off the 2022 EPCOT Festival of the Arts!  This festival celebrates the culinary arts. We’ve been busy updating you on alllllll the festival happenings and some of the exclusive merchandise available at the fest!

Taking a break from the chaos for a bit — we’re bringing you a Disney recipe that will help you celebrate the festival from home!

This recipe for Vegan Pavlova with Red Fruits was shared by Disney, and comes from the Head Sous-Chef of Disney’s Newport Bay Club in Disneyland Paris! Let’s find out how we can make this Disney delight at home!



Vegan Meringue

1 tsp. cider vinegar
1 cup powdered sugar
1 tbsp hazelnuts
½ cup chickpea water (liquid from a can of chickpeas)

Vegan Coconut Cream

1 cup coconut cream
1 cup powdered sugar
1 lime, zested

You can use whatever combination of red berries and fruits you’d like!

How to Prepare

  1. Preheat oven to 215 degrees Fahrenheit.
  2. Roast hazelnuts in a pan over medium-low heat. Once cooled, use a clean towel to remove the outer layer. Crush the hazelnuts and set aside.
  3. By using a food processor or hand mixing, whip the chickpea water, adding the sugar and vinegar as you go. You want to whip the liquid until it turns into a white foam with stiff peaks.
  4. Place the mixture in a pastry bag or zip-top bag with a corner cut off and begin piping circles around 10cm wide. Sprinkle with the crushed hazelnuts and bake for 90 minutes.
  5. Using the food processor or by hand mixing, whip the coconut cream until it has the consistency of whipped cream. Add the lime zest and powdered sugar, then place in a pastry bag.
  6. Arrange the Pavlova starting with one of the meringue disks. Add a layer of coconut cream, then a layer of fruit, more cream, and another meringue disk. Top it all off with more fruit and crushed hazelnuts and voilà! A dessert worthy of being in a museum!
