  • 1/4 tsp cinnamon
  • 1/8 tsp sea salt
  • 2 tsp coconut oil
  • Maple syrup or honey
  • Candied walnuts
  • Dried cranberries
  • Large sweet potato

For a savory appetizer, you will need:

  • 2 tsp olive oil
  • Sea salt flakes
  • Goat cheese
  • Dried cranberries
  • Roasted walnuts
  • Large sweet potato

For both appetizers, you will need a Mickey-shaped cookie cutter!

Follow the directions below:

  1. Preheat your oven to 425 degrees.
  2. Wash the sweet potato, and peel the skin if you prefer. Slice sweet potato into ¼” thick rounds. If using Mickey cookie cutter, cut into shapes now.
  3. For the sweet version, mix cinnamon and coconut oil in a bowl and toss sweet potatoes to coat. For the savory version, toss sweet potatoes in olive oil.
  4. Place on greased baking sheet and sprinkle with salt. Cook for 10 minutes, then flip and bake for an additional 8 minutes or until browned.
  5. Serve the slices with your choice of either sweet or savory toppings!
