Recipe Four Cheese Sauce Mama Melrose Disney’s Hollywood Studios



1 quart half and half
1/4 cup parmesan cheese finely grated
1/4 teaspoon white pepper
1 1/2 tablespoons Reggianto cheese Argentine brand Zerto, shredded
1 teaspoon olive oil
1 quart heavy cream
1/2 teaspoon kosher salt
1 ounce Asiago cheese, shredded
1 ounce garlic, minced
2 ounces Fontina cheese

For roux: 1/2 stick butter (2 ounces), 1/4 cup flour


1. Make a roux by melting the butter and stirring in the flour. Cook over medium heat for 5-7 minutes, stirring often.

2. In a 4-quart saucepot, add olive oil and heat, add garlic, then add cream and bring to a simmer.

3. Stir in the roux (no lumps).

4. Add heavy cream and cheese, cook slow, simmer and season.
