Gideon’s Bakehouse Announces NEW Additions — See The April 2025 Lineup Here!

Disney Springs has so many of our favorite spots!

There are tons of great restaurants, amazing live entertainment and recreation, and stores for almost everyone!  One of our favorite spots is Gideon’s Bakehouse, and luckily for us, they’re back with new flavors in April!

There are so many amazing options when it comes to eating in Disney Springs, and Gideon’s Bakehouse is popular for a reason! This bakery serves up huge cookies, cakes, cold brews, and more in a unique, gothic style. 

This bakehouse tends to have long lines to grab the iconic desserts and the rotating monthly flavors. Over on Instagram,  the bakehouse gave us a sneak peek at April’s new, limited-edition cookie — The Carrot Cake Cookie!

The cookie is almost half a pound, created with a blend of spices, molasses, and finely chopped carrots! It’s covered in house-made candied pecans with a carrot cream cheese glaze on top. This sounds like the perfect cookie for Easter! You can only purchase 2 per person while supplies last at the Disney Springs and East End Market locations.

Also in April, the Pineapple Cake is returning! It’s a vanilla cake covered in pineapple buttercream with layers of pineapple jam, pineapple caramel, and brown butter crumbs. You can purchase slices on Wednesday and Saturday, or pre-order an entire cake at the Ease End location.

To wash it all down, you can grab the Coconut Cream Nitro Cold Brew only in April! It uses real coconut cream and can only be purchased in Disney Springs. Gideon’s also gave us a look at this month’s special character, Olivia and Bun!

Each month, the Gideon’s menus feature a special character that has become a staple of the bakehouse. You can learn more about the character when you grab a menu this month. We are already craving the Carrot Cookie, but if you can’t make it to the bakehouse this month, you can make your own Carrot Cake Cookies at home! (We just made this recipe recently and did eat one of our own while writing this article.)
