Disney and Dole have a long history of partnerships, including the beloved Dole Whip and so many other great treats in the Disney Parks.

Dole’s Recipes for Courage and Kindness

To commemorate Eat More Fruits and Vegetables Day on May 27th, Disney and Dole are partnering again to release 20 new princess-themed recipes! The new collection is called “Recipes for Courage and Kindness” and was curated by Melanie Marcus, MA, RD, the Dole nutrition and health communications manager.

Currently, there are four new recipes on Dole’s website based on the Disney princesses. The princesses included in this collection include Snow White, Cinderella, Aurora, Ariel, Belle, Jasmine, Pocahontas, Mulan, Tiana, Rapunzel, Merida, and Moana

Brave Banana Cherry Teacakes

Based on Merida, the Brave Banana Cherry Teacakes are vegan buns with walnuts, mashed bananas, almond butter, and dried cherries! This dish is only 249 calories and takes about 36 minutes to make.

Ingredients

  • ¾ cup white whole wheat flour plus additional for dusting
  • ½ cup oat flour
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 3 tablespoons chopped walnuts
  • 2 tablespoons unsweetened dried cherries, chopped
  • 2 ripe DOLE® Bananas, 1 peeled and mashed (about ½ cup), 1 peeled and thinly sliced crosswise
  • 1/3 cup oat milk
  • 3 tablespoons natural buttery spread with olive oil, melted
  • 3 tablespoons avocado oil
  • ¼ cup almond butter
  • Honey for serving (optional)

Directions

  1. Whisk flours, baking powder and salt in a large bowl; stir in walnuts and cherries. Whisk mashed banana, milk and buttery spread in a medium bowl. Stir banana mixture into flour mixture until incorporated; transfer to lightly floured work surface and knead just until dough comes together. Divide dough into 8 pieces; roll into balls and shape into ¼-inch-thick disks.
  2. Heat 1½ tablespoons oil in a large nonstick skillet over medium heat. Add 4 dough disks; cook 8 minutes or until golden brown, turning once. Repeat with remaining 1½ tablespoons oil and 4 dough disks. Makes 8 bannocks.
  3. Serve bannocks topped with almond butter and remaining sliced banana; drizzle with honey, if desired.

Heigh-Ho Apple Bruschetta

Based on Snow White, the Heigh-Ho Apple Bruschetta features crunchy baguette slices topped with a spiced fruit mix and vegan cheese! This dish is a healthy and quick treat with 149 calories and taking only 24 minutes to make!

Ingredients

Glass Slipper Veggie Tea Sandwich

Based on Cinderella, the Glass Slipper Veggie Tea Sandwiches are small bites featuring a mix of veggies and cream cheese! This recipe is the shortest and easiest to make at only 156 calories and a short 15 minute time for prep and cooking!

Ingredients

  • ¼ cup raw cashews
  • 2 DOLE® Green Onions, thinly sliced
  • 1 DOLE® Radish, chopped
  • ½ small DOLE® Carrot, peeled and chopped
  • ¼ cup small DOLE® Cauliflower florets
  • 2 tablespoons fat free cream cheese
  • ½ teaspoon kosher salt
  • 8 slices 100% whole wheat bread
  • 1/6 English cucumber, halved lengthwise and thinly sliced crosswise

Directions

  1. Combine cashews and enough hot water to cover in a small bowl; let stand 30 minutes, then drain.
  2. Pulse onions, radish, carrot, cauliflower, cheese, salt and cashews in a food processor until mostly smooth. Makes about 2/3 cup.
  3. Cut 16 glass slippers out of bread slices using a (4-inch) glass slipper or high-heeled shoe-shaped cookie cutter.
  4. Spread onion mixture on 8 glass slipper pieces; top with cucumber and remaining 8 glass slipper pieces.

Wakey Wakey Vegan Hash

Based on Aurora, the Wakey Wakey Vegan Hash features sweet potatoes, plantains, bell peppers, and onions! This recipe is hearty and filling but only 262 calories with a 33 minutes to prep and cook time!

Ingredients

  • 1½ tablespoons olive oil
  • 1 large DOLE® Sweet Potato, peeled and chopped
  • 1 green DOLE® Plantain, peeled and chopped
  • 1 medium red bell pepper, chopped
  • ½ medium yellow onion, chopped
  • 1½ cups sliced DOLE® Mushrooms
  • 3 garlic cloves, minced
  • 2 cups loosely packed DOLE® Baby Spinach
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ cup roasted salted pepitas
  • Hot sauce and vegan sour cream for serving (optional)

Directions

  1. Heat oil in a large nonstick skillet over medium heat; add potato, cover and cook 6 minutes or until almost tender, stirring occasionally. Add plantain; cook, uncovered, 2 minutes or until almost tender, stirring occasionally. Add bell pepper and onion; cook 4 minutes or until tender, stirring occasionally. Add mushrooms; cook 4 minutes or until tender, stirring occasionally. Add garlic, spinach, salt and black pepper; cook 2 minutes or until spinach is wilted and garlic is fragrant, stirring frequently. Makes about 4 cups.
  2. Serve hash sprinkled with pepitas, topped with hot sauce and sour cream, if desired.
