Durban Spiced Chicken on Sugar Cane Skewer

Serves: 4
Ingredients:
Durban Spice:
1/2 ounce paprika
1/4 ounce ground cardamom
1/4 ounce ground coriander
1/4 ounce salt
1/4 ounce ground black pepper
1/4 ounce ground cumin
1/8 ounce cayenne
2 pounds chicken breast
8 sugar cane sticks
Voodoo Sauce:
4 ounces teriyaki sauce
1/2 ounce fresh ginger
2 ounces dark brown sugar
1 ounce chipotle pepper
1/2 ounce dry mustard
1 ounce Grey Poupon mustard
Method of Preparation:
Cut chicken breast into 4-ounce pieces. Put chicken on the sugar cane sticks. You may cut small holes in chicken to make it easer for the skewer to pass through.
Make the Durban Spice by combining all ingredients.
Prepare the Voodoo Sauce by bringing teriyaki sauce to a simmer in a small saucepan. Add ginger, brown sugar, chipotle pepper, dry mustard and Grey Poupon. Simmer for about 5 minutes. Puree sauce until smooth and set aside.
In a small saute pan, heat a small amount of oil on medium-high heat. Season chicken skewers with Durban spice and cook until done, about 4 minutes on each side.
Serve with Voodoo Sauce.
