Recipes Sweet Potato Salad The Crystal Palace Magic Kingdom
¼ cup pickled Jalapenos
2 cloves Garlic
¼ cup Lemon Juice
½ cup Olive Oil
1 teaspoon Salt
3 large Sweet Potatoes (about 3 pounds)
1 cup Red Onion, diced
½ cup Canned Black Bean, drained
½ cup Red Peppers, diced
¼ cup Canola or Vegetable Oil
½ teaspoon Salt
1 tablespoon Cilantro, chopped
Method of Preparation:
Preheat oven to 375°
Using a blender, combine the jalapenos, garlic, lemon juice, and 1 teaspoon of salt. Slowly add the olive oil. Set aside.
Peel the sweet potatoes and cut into a large dice. Cut the onions and peppers to be the same size as the sweet potato pieces.
Toss the sweet potatoes with the canola oil and season with ½ teaspoon of salt. Place them on a sheet pan in a single layer and place in the oven. Cook for 20 – 30 minutes, or until they are just starting to get soft. Let them cool to room temperature.
Combine the sweet potatoes, onions, peppers, black beans and cilantro. Add the lemon dressing you set aside and toss to coat evenly.
