Recipes Sweet Corn Polenta Le Cellier Canada – Epcot

Yield: 5 cups

1/2 cup corn polenta(Finely ground corn meal)
½ cup Spanish onion(diced small)
1 cup water
1 cup heavy cream
½ cup maple syrup
1 cup parmesan cheese(Shredded)
½ cup fresh corn kernels(Removed from cob)
1 tablespoon olive oil
1 teaspoon fresh chives(chopped)
Salt and black pepper to taste

Method of Preparation:
In a medium saucepan, lightly cook onions and fresh corn until onions are translucent.Add water, cream, and maple syrup.Bring to a boil. Stir in polenta and cook on low heat for 5 minutes. Cover pan with foil and bake in oven for 45 minutes at 350f. Remove from oven and stir in chives, parmesan, and season with salt and pepper.
