Recipes Mediterranean Chicken Crystal Palace Magic Kingdom

Yield: 47 oz (one small paella pan)

1 ounce olive oil
1.5 pounds chicken breast cut into small strips
½ ounce minced garlic (paper-thin)
12 ounces gourmet tomatoes (1-inch dice)
6 ounces feta cheese (rough crumbles)
3 ounces Kalamata olives (roughly chopped)
½ ounce fresh basil (very thin chiffonade)
salt and pepper

Method of Preparation
Sauté chicken breast strips in olive oil for 5 minutes. Season lightly with salt and black pepper (feta cheese and olives are already high in salt). Add paper-thin minced garlic and sauté for 2 more minutes without coloration. Add diced tomatoes, then feta cheese crumbles and Kalamata olives. Add chiffonade of fresh basil at the end.

Check seasoning.

Total cooking time is approximately 10 minutes.
