Recipes Chocolate Mousse Chefs de France Epcot
Yield: Prepares 2 cups of Mousse
4½ ounces Semi-Sweet Chocolate
1/3 cup Butter, broke into pieces
2 Egg Yolks
3 Egg Whites
1½ Tablespoons Granulated Sugar
Method of Preparation:
Melt the chocolate in a double boiler. Remove from heat and add the butter, stirring with a wooden spoon. Add the egg yolks and mix in. Allow the mixture to cool completely.
Beat the egg whites until very stiff; halfway through, add the sugar. Fold the egg whites into the chocolate mixture, beginning with a handful to soften the chocolate. Gently fold in the remainder with a spatula.
Place in a dish and refrigerate for at least 2 hours to set. Garnish as desired.
