Via Napoli Cantucci
Cantucci is a miniature almond biscotti
150 grams All Purpose Flour (a little over 1/2 a cup)
100 grams Sugar (a little less than 1/2 a cup)
100 grams Almonds (a little less than 1/2 a cup)
50 grams Butter (a little less than 1/4 cup)
1 pinch of Salt
2 Eggs beaten
Slightly toast almonds for 10 minutes at 300 degrees.
Soften butter to room temp and mix all dry ingredients together thoroughly.
Roll ingredients into two logs. Place on parchment paper or greased cookie sheet and brush logs with beaten whole eggs.
Bake for 20 minutes at 300 degrees. Cool logs.
After logs are cool, slice on bias across the log.
Re-cook slices for 20 minutes at 300 degrees until golden brown.
