Recipe PENNE WITH PANCETTA Spoodles at Disney Boardwalk

4 ounces pancetta or bacon, diced
1/4 cup olive oil
2 medium onions, diced
2 to 3 garlic cloves, minced
3 (14-ounce) cans whole tomatoes, crushed
1/4 teaspoon salt
1 – 1 1/2 teaspoons dried crushed red pepper
1/4 teaspoon ground black pepper
12 ounces penne, cooked

GARNISHES: shaved Romano or Parmesan cheese, minced fresh chives


COOK pancetta in hot oil in a Dutch oven over medium heat until crisp; drain pancetta on paper towels, reserving 1 tablespoon drippings in pan.

SAUTE onion in hot drippings 3 to 4 mintures. Add garlic, and saute 2 to 3 minutes. Stir in tomatoes, salt, and red and black pepper; cook, stirring occasionally, 10 minutes or until thickened. Add pasta, and cook until thoroughly heated. Sprinkle with pancetta. Garnish, if desired.

YIELD: 4 to 6 servings. Prep: 20 minutes, Cook: 20 minutes.
