Maple Glazed Salmon

Ingredients for Maple Glaze:
1 cup maple syrup
¼ cup light brown sugar
1 tablespoon honey
Method of Preparation:
1. Mix all ingredients in a small saucepan and cook over medium heat until flavors are incorporated.
2. Reserve warm for service.
Ingredients for Candied Pecans:
1 cup chopped pecans
1 tablespoon butter
¼ cup apple juice
¼ cup sugar
to taste salt
Method of Preparation:
1. Melt butter in sauté pan until hot.2. Add pecans and cook until toasted.
3. Add apple juice and sugar, and cook until syrup forms about 5 minutes.
4. Add salt to taste.
Ingredients for Salmon:
4 each salmon filets, 4 ounces each
2 cups hearty greens, frisee or spinach work best
candied pecans
1 cup maple glaze
Method of Preparation:
1. Heat sauté pan with olive oil until hot.
2.
Cook salmon on one side until brown, turn over and brush cooked side with maple glaze.
3.
Cook remaining side until desired doneness.
4.
Brush remaining side with glaze.
5.
For plating, place salmon over greens, sprinkle with pecans and brush with more glaze.
